Mango and Strawberry-Lemonade Smoothie
With a hint of cinnamon

Ingredients:

• 1-juice box - RW Knudsen Lemonade (6.75 oz) (@Amazon)
• 1 individual strawberry Jell-O cup
• ½ c plain Greek Yogurt
• 1 Teaspoon Raw Honey
• ¼ tsp cinnamon extract
• ¼ tsp almond extract
• 1 scoop Native Path Collagen Protein or use your preference of protein powder
• 1 ½ cups mango chunks

Blend until smooth & creamy!
Yummy and healthy! Makes 1 large serving (24 0z)

Pimiento Cheese
Makes several servings

Ingredients

16 ounces coursely shredded sharp cheddar cheese
1 block cream cheese (softened)
2 - 4 ounce jars diced pimientos (with juice)
1 cup mayonnaise of your choice
1/4 cup Heinz 57 Sauce
5 shakes Tobasco Sauce (or as preferred)
1 Tbsp. lemon juice
salt and pepper to taste
Mix well - chill - enjoy

Potato Patties
Prep Time: 10 minutes - Total Time: 20 minute - Makes:12 patties

Ingredients

4 servings of instant potatoes, cooled
1 egg
1/2 tsp salt
2 Tbsp onion, finely chopped (grated)
butter

Directions

1. In a large bowl, combine cooled potatoes with egg, salt, and onion.
2. Melt one Tbsp butter or margarine in a skillet over MEDIUM-HIGH heat.
3. Drop by heaping Tbsps into skillet and flatten to desired thickness.
4. Brown on both sides, turning carefully. Add more butter or margarine as needed.
Serve hot or at room temperature. Refrigerate any leftovers.

Mardi's Homemade Spicy Spaghetti Sauce

Ingredients:

1. Hot Italian Sausage
2. Sliced Mushrooms - I prefer Portobello - white mushrooms are fine
3. Diced Onion - I use sweet onions when available
4. Red Bell Pepper - Use your preference in color
5. 6 Minced Garlic Cloves
6. 2 Cans Tomato Paste
7. 1 Large Can Tomato Sauce
8. 2 Spiralized Zucchini or use spaghetti noodles
9. Mozzarella Cheese or your preference of cheese
10. Butter
11. Olive Oil
12. Water as needed

Spices:

1. Sea Salt
2. Basil
3. Oregano
4. Morton's Nature's Seasoning Blend
5. Black Pepper

Notes:

Season to taste. Use fresh seasonings if you prefer. I don't measure, so add the amount of seasonings you like. Add water if the sauce is too thick. I generally sprinkle seasonings across the food while it's cooking. Heat brings out the flavor from seasonings. I do sprinkle a little heavier with the Oregano than the Basil. If you like a sweeter tasting sauce, Basil is the one to choose to sprinkler a little heavy also. When it comes to salt, be careful not to add too much. You can always add salt from the table when it's time to serve.

Directions:

1. In large skillet, cook sausage, but first, take the skin off. Pinch off bite-size or larger pieces and roll into meatballs. While cooking, season to taste with all seasonings indicated above, accept sea salt and pepper. Cook until browned throughout. Drain off fat.
2. Sauté mushrooms in skillet with a small amount of olive oil. Season to taste with all seasonings indicated above, accept sea salt.
3. In a separate skillet sauté onions and bell pepper. season to taste with all seasonings indicated above, accept sea salt.
4. In sauce pan combine tomato sauce and paste - Stir in seasonings to taste with all seasonings indicated above, accept sea salt. Add about a heaping tablespoon of butter. Makes the sauce have a smooth flavor.
5. Combine all cooked ingredients and simmer for about 4 hours. You can bake in the oven, using a Dutch oven cookware at 250 degrees. I put my sauce in the crockpot and cook for the same amount of time. After about an hour or so, taste sauce to see if any other seasonings are needed.

Spiralize Zucchini: Directions

Note: You will need a spiralizer for best and quick results.

Only spiralize the amount you need for one dinner. You should always prepare the Zucchini when you are ready to eat it with the sauce. You want the zucchini to be fresh each time you serve dinner.

1. After spiralizing the amount of Zucchini you want for dinner, use a paper towel and dab to get rid of excess moisture. Sprinkle sea salt and pepper on the zucchini and toss/stir to blend the seasonings into the zucchini. Sauté in a skillet with a little olive oil for approximately 3 to 4 minutes. Stir occasionally until zucchini is still a little crisp. If you cook too long, the zucchini will get mushy.
2. When zucchini is done, immediately place on your plate. Scoop sauce over zucchini. Add desired amount Mozzarella or your preferred cheese on top.
3. If you like your cheese melted, place the plate in the microwave to melt cheese.

Serve and Bon Apatite!

NOTE: Be aware that you may have sauce left over for your next meal. This recipe makes a lot. If more sauce and spiralized zucchini is required, double the recipe.
