I am featuring this recipe for March.  It looks so refreshing and yummy.  Can you imagine the taste of lemon pudding and strawberries in your mouth?

This dessert can be eaten and enjoyed at any time of year.  I know getting fresh fruits in the Winter can be daunting.  That's why I chose this dessert today.

Hello 2019!

Well, the celebrations are over, the Christmas decorations are down, and the kids are all back to school. I feel like I'm finally getting myself back into the swing of things (although this cold weather makes me just want to snuggle in a blanket all day long!)

I know that everyone is making New Years Resolutions to eat better, and while that is always a goal of mine - haha - my biggest resolution every year is to rededicate myself to making dinner every night. Especially after the hustle and bustle of December, it's good to get back into a regular routine. 

So if you are easing into 2019 and wanting to make dinner at home a priority on your list, here are a few of my favorite easy dinners.

Mango and Kiwi Popsicle by Yummly Recipes

Serves: 10 popsicles
Ingredients

2 mangoes
1 ¼ cups lemonade
3 – 4 kiwis, peeled and sliced

Blend the mangoes in a blender or food processor until pureed. Add the lemonade and blend well. I used homemade lemonade (I always have some around during the warmer months). You can use store-bought, but it won’t have that fresh citrus zing to it that I personally love!

Fill your popsicle molds ⅔ of the way full. It will seem as though we are being skimpy with the liquid, but the kiwi takes up a lot of room.

Place the sliced kiwi into the molds. I fit two slices per mold. The liquid is thick enough that the kiwi slices will not sink to the bottom. Freeze for about 1 ½ hour before inserting popsicle sticks (this is so we don’t end up just pushing the kiwi down when we insert the sticks. Freeze until solid, about another 3 – 4 hours.

Directions: Heat milk to boiling, then pour into extra large mug.  Stir in cocoa mix, cinnamon and vanilla extract.  Reheat if needed.  The recipe is below.  Hot, smooth & creamy!  Yummy and makes approximately 16 0unces of hot, delicious Mexican Hot Chocolate.  Sit back, relax, & take some time for you.
