Mexican Hot Chocolate

Delightful flavor for those cold days!

  • 2 cups unsweetened vanilla almond milk
  • 2 Nestle Hot Cocoa Mix packets
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract

Directions: Heat milk to boiling, then pour into extra large mug.  Stir in cocoa mix, cinnamon and vanilla extract.  Reheat if needed.

Hot, smooth & creamy!

Yummy and makes approximately 16 0unces of hot, delicious Mexican Hot Chocolate.

Well, the celebrations are over, the Christmas decorations are down, and the kids are all back to school. I feel like I'm finally getting myself back into the swing of things (although this cold weather makes me just want to snuggle in a blanket all day long!)

I know that everyone is making New Years Resolutions to eat better, and while that is always a goal of mine - haha - my biggest resolution every year is to rededicate myself to making dinner every night. Especially after the hustle and bustle of December, it's good to get back into a regular routine.

Old Fashioned Banana Pudding

Old Fashioned Banana Pudding

1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
2 cups milk (NOT skim)
4 or 5 ripe bananas, sliced thin (cover with plastic wrap or sprinkle with lemon juice to keep them from turning brown)
1 box vanilla wafers
1 teaspoon Vanilla extract
1 tablespoon Butter (not margarine)
4 Egg yolks (Large eggs or better)

4 egg whites, room temperature
5 tablespoons sugar
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract

Preheat oven to 375°F. Line the bottom of a 9×9-inch pan with a layer of vanilla wafers.

Combine sugar, flour and salt in a bowl, and mix well. Set aside.

In a heavy saucepan, beat the egg yolks well. Over medium heat, add the flour mixture to the egg yolks, alternately with the milk and vanilla, stirring constantly. Bring to a gentle boil and, when the mixture begins to thicken, add the butter, continuing to stir. Keep boiling and stirring until mixture reaches a nice pudding consistency. Make sure you don’t scorch the pudding. Remove from heat.

Place a layer of banana slices on top of the vanilla wafers. Pour half of the pudding over the banana layer. Put down another layer of vanilla wafers, another layer of banana slices, and cover with the remaining pudding.

Beat the egg whites at high speed until they form soft peaks. Add the cream of tartar. At high speed, gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. Fold the vanilla into the meringue, and spread the meringue over the pudding, sealing it at the sides of the dish.

Bake until meringue browns, 12 to 15 minutes.

Pumpkin Spice Smoothie

• 1 ½ cup unsweetened nut milk
• 1 scoop LadyBoss Protein powder – or your own protein powder with sweetener to taste
• 2 heaping tablespoons Pumpkin Spice Dessert Mix by Royal Delights (found at Walmart)
• Handful of ice cubes

Blend until smooth & creamy! Yummy and healthy! Makes 18 0unces

White Chocolate Cloud Shake

o 8 oz. unsweetened almond milk
o 1 scoop LadyBoss LEAN Nutritional Shake Mix
o 2 Tablespoons sugar free white chocolate pudding mix
o Handful of ice cubes

Blend well in a blender. Makes a 10 oz shake
Variation: Use coconut or dairy milk instead of almond milk.

Note: LadyBoss Protein contains sugar. If you are using an unsweetened protein powder, sweeten to taste!

Peanut Butter Chocolate Smoothie

With Almond Milk – Tastes like Reese’s Peanut Butter Cup  


  • 1 ½ cups unsweetened almond milk
  • 4 tablespoons Smooth Peanut Butter
  • 1 Tablespoon Chocolate powder
  • 1 scoop LadyBoss Protein, or use your preference of protein powder

If you are not using Ladyboss protein, add sweetener to taste.Taste first!!

  • ½ teaspoon vanilla extract
  • 8 ice cubes

Blend until smooth & creamy!  Yummy and healthy!  Makes 1 large serving (18 0z)

Turtle Cheesecake Smoothie
o 8 oz. unsweetened almond milk
o 1 scoop LadyBoss LEAN Nutritional Shake Mix
o 1 tsp. sugar free caramel flavoring
o 2 oz. fat free cream cheese
o 4 pecans
o Handful of ice cubes

Blend well in a blender.

Variation: Add 1 extra cup almond milk and 1 cup frozen strawberries. Delicious!!

Variation: If you are using a unsweetened protein powder, sweetener to taste.
